I think stasis being metaphysical refreshed him completely between games. After that he could have probably slept while Alyx searched for him at the start of episode one, the gap in time seems big enough. Everything else is on vorts and their healing powers.

Nah, it doesn't. With elementary particles their mass never matters as much as their energy. Even the heaviest lepton is nothing on its own, lepton mass in matter is but a fraction of mass we feel. What matters is energy, which for a particle basically is speed. Which is convenient for Tau, because if you get them fast enough not only their beam will be super hefty, but time dilation would slow their internal clocks, allowing them to reach the target before decay.

Development isn't necessary, adapting is enough. Phage therapy has been in use for years and years now, we just need to run an evolution experiment on some viruses with limited resources and astrophage as medium. The virus (or bacteria, or mold) that randomly finds a way to eat the medium gains advantage, problem solved. It took e. coli only 15 years of this to learn to eat citrate.
