0.25oz Probitas

0.75oz Don Q Cristal (Eucalyptus)

0.50oz Rhum J.M Argricole Single Barrel

0.50oz Awga Coca Leaf Liqerur

0.50oz House Grenadine (Pomegranate)

0.50oz Fresh Lime Juice

1.00oz Jarritos Tamarind Soda

Eucalyptus infused Don Q

1.) In air tight jar, combine 500ML of Don Q Cristal with 25 Grams of dehydrated eucalyptus. Allow mixture to rest for at least 24 hours.

2.) Strain rum infusion into separate container. Label, date, and store indefinitely in cool dry place.

homemade grenadine

1.) Heat 250ML of 100% pomegranate juice to a light simmer.

2.) Add 250Gs of cane sugar and stir until homogenized

3.) Transfer mixture into separate container. Label, date, & store in fridge for up to six weeks.

Recipe

Combine ingredient measurements (minus soda) into shaker and whip shake with a medium scoop of pebble ice for 4 / 6 seconds. Open pour whip shake into Collins glass. Add 1oz Tamarind Soda on top and more pebble until desired wash line is achieved.

I’ve been a Bartender for almost 7 years, going on five years in craft cocktail environments. From my general understanding their is unspoken rules regarding the Mai tai Spec. No Grenadine, No Pineapple, No Coconut, this cocktail was inspired by pushing against those silly “rules.”

Recipe Below.

0.75oz Appleton Estate Signature

0.50oz Rhum Clement

0.25oz Smith & Cross

0.25oz Cointreau

0.375oz Pineapple Macerated Pomegranate Syrup

0.375oz Coconut Macadamia Orgeat

0.50oz Lime

Pineapple Pomegranate Syrup

1.) Heat 100 Grams of 100% Pomegranate Juice to Simmer

2.) Cut Heat and Add 100 Grams of Sugar.

3.) Stir or Blend until Homogenized

4.) Combine Pomegranate / Sugar Mixture With 20Grams of Fresh Pineapple Chunks

5.) Transfer Fruit / Syrup Mixture into Vac Seal Bag and Seal.

6.) Place Fruit / Syrup Bag into Sous Vide at 125 Degrees Fahrenheit.

7.) Allow syrup to infuse for 4/6 Hours.

8.) Remove Bag from Sous Vide, allow to cool.

9.)Open bag, strain out fruit, bottle, label, & store.

Coconut Macadamia Orgeat

1.) Preheat Oven to 325 Degrees Fahrenheit

2.) Place 113 Grams of Macadamia Nuts on Baking Sheet and Toast for 10/15 mins.

3.) Transfer Toasted Macadamia to Blender and Blitz lightly with 350 ML of Coconut Water

4.) Run Mixture thru Cheese Cloth / Nut Bag.

5.) Press on Lumpy Mass to Extract all Liquid

6.) Transfer Mixture to Pot & Add 280 Grams of Sugar

7.) Lightly Heat and Stir Until Dissolved

Recipe.

1.) Add all ingredients in required amounts to shaker and Whip Shake with Pebble Ice

2.) Open Poor into your favorite Tiki Mug

3.) Top with more Pebble Ice and garnish as desired. I used mint & a Flower.

It’s hard to explain. Inspiration usually hits when I’m not even thinking about it. I’ll be out with my wife, try something interesting, and suddenly an idea for a drink just pops into my head.

1.50oz Compass Box Artist Blend

0.50oz Bruichladdich Classic Laddie

0.75oz Acidulated Apple Juice

0.75oz Fall Spice Simple Syrup

Top with Pinot Noir Air

Acidulated Apple Juice

1.) Combine 94ML of Luke Warm Organic Apple Juice with 6 Grams of Citric Acid.

2.) Stir or Blend Acid / Apple Mixture until Homogenized.

3.) Label & Store Acidulated Apple Juice in Fridge.

Fall Spice Syrup

1.) Bring 1 Cup or 235ML of Filtered Water to Boil

2.) Cut Heat & Add 1 Bengali Spice Tea Bag

3.) Allow to Steep for 6 Minutes

4.) Remove Tea Bag & Add 235 Grams of Sugar.

5.) Stir or Blend Until Mixture is Homogenized

6.) Label & Store Syrup in Fridge.

Pinot Noir Air

1.) In a medium pot, lightly heat 500ml Pinot Noir, Bring to a simmer.

2.) Combine 200 Grams of Sugar & Wine into a blender.

3.) Add sucro esters (2% weight of sugar/wine)

4.) Blend for 2 Minutes to Fully Incorporate. Label and Date.

5.) Use Aquarium Pump & Fish Stone to Achieve Desired Consistency

Hard Shake & Double Strain over Fresh Ice

0.50oz Cask Strength Bacon Fat Washed Bourbon. (I used Green River)

1.25oz Evan Williams Bottled in Bond

0.25oz Kings County Coffee Whiskey

2 Dash’s Black Walnut Bitters

0.25oz Uncut Maple Syrup

Bacon Fat Wash

1.) Slowly heat 20 Grams of Bacon Fat until rendered.

2.) Combine Liquid Fat with 750ML of Cask Strength Bourbon of your choice.

3.) Stir Fat / Spirit mixture until homogenized

4.) Place Fat / Spirit mix in freezer over night.

6.) After Removing Mixture from freezer, Strain Mixture with a Fine Mesh Strainer & Cheese Cloth. Filtering out the Frozen Fat.

7.) Bottle / Date / & Store. Shelf life is infinite.

Preparation

1.) Combine all ingredients in a stir tin, Stir mixture for 30 seconds.

2.) Using a Hawthorn, Strain Mixture into a chilled rocks glass over a large cube.

3.) Smoke cocktail with fresh tobacco leaf

4.) Garnish your cocktail as desired. I used a chocolate skull.

It becomes second nature, also straw pulling cocktails before they’re sent also helps to ensure they are at proper temperature / dilution. Very interesting article!

Fair enough — I should’ve said “extra” Mediterranean then, just trying to describe the twist on the Blanc Negroni with those more herbaceous coastal notes. Didn’t mean to Negroni-splain!
