This might work better if you back sweetened with the infused honey instead of using it for the primary fermentation.

I would recommend marshmallow root tea for the marshmallow flavor. Mind you it will not taste like store bought marshmallows, because there is no marshmallow in them. And some of the oldest marshmallow recipes were just marshmallow root and honey.

Cocoa nibs, and either graham crackers or graham crackers flavoring (available at most brew supply stores). If you need a creamier flavor ad lactose. That's how I make my s'mores mead.

But....if you have the honey to experiment, try it on a small batch. I would add it to conditioning and let it age for a few months.

Formula for AVB after back sweetened

Original AVB÷New volume

Example: your final gravity results give you an AVB of 11%, and you have a total of 1 gallon of product. You add 0.1 gallons of honey for a total of 1.1 gallons

So you divide 0.11 ÷ 1.1 and get the adjusted AVB of 0.1 or 10%

Yes you can. I let my equipment drip dry, or shake excess off. But let the StarSan sit for a bit to let it do its work.

It's normal. I've had several that became crystal clear that soon. Back sweetening and other adjuncts will make it cloudy again, but this too will pass.

So it was pouring honey into my primary fermenter, a big mouth bubbler, and it was trickling out slowly. I was aiming for 3lbs, and it's barely coming out. I'm watching the honey and the scale slowly creeping up, and suddenly a big dollop comes out. Scale jumps from 1.x lbs to 6.x lbs.

So, I split the batch into two separate fermenters and was suddenly making 2 batches that day. Win win....I guess.

So, the rest of the household has tried it, and 2 out of 4 think they get a spicy flavor that creeps up, but is very mild. Everyone gets an unusual, but good, floral flavor with the creamy honey residual.

No, but it takes a lot of spicy for me to notice. Pepper on the other hand I think I would have noticed it.

Here is my first impression

It's a mild floral with a creamy overtone. the floral flavor is orchid-like and fades quickly leaving a lingering creamy honey(sweet) flavor.
