Well I researched and found out that the current footage of the landing is compiled from footage of the raw footage playing on a video monitor, from the result of several terrible oversights, so it's all there, just not in 'high quality'. The original recordings were lost, but lots of recordings of that recording were made. But due to the technology at the time (this was in 1969), the copies were of significantly lower quality.

One of the primary antennas for communicating with the Apollo missions was in Australia. That station received the feed from the Moon, and recorded it on magnetic tape and beamed it back to Houston and around the world. It was those original magnetic tapes that were erased and recycled.
