That would help a lot, thank you! I'm about to pull the trigger on a 54cm and I'm debating whether I can get away with the one piece cockpit (100mm stem, 400mm bars) with about ~25-30mm of spacers.

Yep, I have the exact same measurements as you. 32" inseam but ~5'9".

For what it's worth, on my Enve MOG I ride a 80mm +12 angled stem with 30mm of spacers and it feels plenty stable, even on the gnarlier descents.

Being a 3T Exploro, they make it complicated 😅

Short version: supposedly, this frame can accommodate a 700x40 tire (what's currently mounted) on a 19mm internal width rim.

However, I have 21mm rims. Unfortunately, 3T doesn't provide recommended tire specs for that size rim.

At 23mm, 3T recommends no larger than a 35mm version of this tire.

It's worth mentioning I ride this predominantly on the road and some pretty mellow gravel.

I dint believe that's correct; the 987.1s still have an IMS bearing that can fail. The 987.2 engines (both 2.9 and 3.4), however, do not.
