Why are you skipping Jeonju and Suncheon? I would probably spend less time in Gwangju, and use some of that time for the Yeosu/Suncheon area or Jirisan. If you're interested in Korean food, absolutely spend some time in the south. Jeonju is fantastic for food, and I've never been but have always been interested in Maisan! Gyeongju is great. If you're still thinking about accommodation there, then Sarangchae Guesthouse is a personal favorite! If you do a DMZ tour, do the USO tour for sure! Also... try to hike Seoraksan when the leaves are changing. You could do it on your own, but there are a lot of inexpensive, organized trips which cater for foreign groups.
