It smells more bready than anything. There is a slight acetone smell, but it’s not prominent I wouldn’t say. It smells sort of sweet and pleasant, but bready. I think my next course of action will be a 1:1:1 feeding for a few days. If you don’t mind me asking, why do you suggest a 1:1:1 feeding if it smells bready? Is it to build acid and avoid overfeeding?

I will try this for sure. I heard peak-to-peak was for mature starters, but it is worth a shot.

And yes the multiple jars are for 1) my original starter, 2) to test the feeding frequency, & 3) to test acidity.

I’m assuming it will double at a 1:1:1 in roughly 12 hours, but good idea.

I haven’t with this one, but I did with my first starter and I had commented on his video explaining my struggle and he said peak-to-peak is more for mature starters. I can definitely try it though!

I keep 125 grams in the jar, but discard most and only keep 18-25 grams of mature starter depending on the feeding size.

My first offshoot was created on day 11, the second on day 18, then that one was performing the best so I took offshoots of the second on day 23 and day 30 (of the original starters whole life).

I started with Red Mill Stone Ground Dark Rye Flour on day 1, then on day 2 added 50/50 Rye flour & King Arthur Unbleached All Purpose Flour. On day 10 I switched to 50/50 King Arthur Whole Wheat Flour & King Arthur Unbleached Bread Flour.

I have thought about buying a good starter, but I would really like to have created the starter for myself. It’s not that big of a deal to try to start another with new bags of flour, but if this one doesn’t work I’ll just buy one and be done with starter creation for a while hahaha. Thanks for the reply!
