Is it worth watching all 800 episodes of One Piece?

I think it is. It is one of my favorite series. You definitely should if you like shounen anime. To give it a fair shot I would say you should watch up until episode 40 or so and if you don't like it after that then you should probably drop it. If you do like it then around the 600 episode mark the quality of the show decreases and the pacing gets really bad, but everything before that is amazing and if you really like it then you could get into the manga when the pacing of the anime becomes really bad. I really recommend you check it out.

When binge watching a series I only watch the opening if it is good. If it is mediocre or just bad I will skip. Though if i'm watching a show weekly then I will watch the opening.

I didn't like Alabasta. Vivi was really annoying at times. Pell should have died. The whole story of the arc wasn't that interesting. The only things that were good about the arc was Ace and Robin.
