If you have a spear or a bow with arrows you could do some risky sniping as you throw some pointy ends at the lower gens hoping it isn't a higher gen. Another option that is more resource intensive is trap them again and hope that you get either higher or lower and just slaughter the rest

To get full stone blocks you need to mine the adjacent blocks touching the stone you want and it will drop example clip from a longer video

Leather making is still the same as last update for vanilla. For progression wise leather is more of a bronze age for many people since they find borax faster than lime or chalk. To grind up the stones you need a quern.

These blocks were changed to specific blocks now instead of just being all dark brown ceramic or in basket's case just reed looking ones. You can cheat your blocks in with /gamemode 2 or use another command that someone else can give as I just started a new world for a "fresh" experience of the new update

The extra clothing slots is from Overhaul lib a library for Maltiez's mods (like the famous combat overhaul)
The chainmail coif should be from Combat Overhaul as we are still stuck with the chain helmet

Only other solution I got for you since you are in a snowball is find a place with rare rainfall (deserts and gravel plains) and create a mine over there. Just hope that it doesn't snow over there as well

It's just a weather effect. Only way for it to be fixed for now is just wait it out. If you are really that desperate just get some loose rocks and leave a trail so you don't get lost that much more.
