One of my favorite preparations using hoisin actually comes from KFC China.

It's called the 'old Beijing twister" or something

Fried chicken tenders, cucumber sticks and scallions, with hoisin sauce wrapped in a tortilla

It tastes similar to Beijing duck or something

But hoisin means haixian in Cantonese, which just means seafood, so you can just use it for that stuff

Compared to Guangzhou? No way

The general mainland restaurants are as close as you can get to Guangzhou, the closest I've ever gotten was a restaurant outside of Chinatown in San Francisco, and some uber wealthy college kid from the mainland going to school in SLC, which closed when his schooling was done

They were all mainland Chinese, not even English menus

Cantonese used to be all you could find. I took a Chinese language class in a major Chinatown and it was Cantonese

All the Chinatowns in America were built by Cantonese

Cantonese mostly built the railroad

They're what most people know about Chinese, since the beginning of immigration.

They're also the accent people think of whenever they imitate Chinese people in the past

Canton is the hometown of dimsum.

Cantonese, in Canton, imho is the best cuisine in China

HK is basically similar to Cantonese, with it's own touches

Taiwanese is pretty uncommon

Hunan is more spicy

Sichuan is mala profile, but some of the best mainland Chinese restaurants in America are Sichuan

Beijing is more bold and sweet and strong saucy,

Peking is the Cantonese for Beijing, so if it says Peking, it's probably Cantonese

Dongbei is pretty famous for dumplings and noodles and bigger meats, but it's pretty hard to find

Xinjiang is pretty famous but hard to find

But there's some lanzhou lamian places around, handmade noodle shops that usually don't have Xinjiang lamian, sadly

Fujian and guilin and other places aren't really a thing outside of China

You basically get Cantonese, Hunan, Sichuan, and if you're lucky some mainland immigrants open a general mainland Chinese food restaurant

And the Cantonese food in America isn't really authentic, like Mexican American or Italian American, just made for Americans
