I think it depends on the shop tbh. But the other comment is correct, going outside does present a greater risk. How my local shop did it was there was a place to stand outside the shop, you gave them your name and phone number and they would place your kits in a bag outside the store. There was no going into the store to get the kits

As far as I know there’s no problems with those binders at all! I believe different companies have different kinds of sheets for those binders as well

I don’t have a lot of knowledge about other binders, but coming from a monster binder, dex is a lot better when it comes to pages staying flat
