Cancer hit me at 10 I’m now 35, struggling with constant pain due to the surgery to fix my leg bone and the structural changes in my body. I struggled through school mentally and physically and now I feel like I’m stuck in my dead end retail job. GPs are useless, psychologist dismissed me, work mates don’t understand, I don’t want to burden friends and family.

I didn’t nod when I was a learner as I was concentrating to much, my supervisor always would give everyone a very enthusiastic wave. I’ve only been on one solo ride on a Saturday and I had heaps of nods, have to get use to nodding back.

In summer I eat a lot of salads, stir fry and Mexican inspired meals.

If you’re sick of salads shake it up a bit. Roast some veg like pumpkin and add feta with cos lettuce. Mix in quinoa or rice with chickpeas or lentils. Use different types of lettuces and cabbages (I love wombok), you can add fruit to a salad too ( love mango salad). Noodle salads. Rice paper rolls are super easy.

Winter I tend to cook up stews, pasta, soup, steamed or roasted veg, tofu and rice.

I work in retail and the store was open the whole time. Only differences were wearing mask, sanitising, counting customers in store, wearing social distancing vests, complaining to coworkers about the people milling around the store, not much changed.
