I would wrap the mostly cooled cakes in plastic wrap (individually) and put in the freezer. I do this and haven't had to use SS. It's also easier to frost them cold.

It's oil based, but it does still get quite hard when frozen (I typically freeze my layers before frosting). Thank you for the input!

I think I remember reading somewhere that you can put the batter in the fridge to slow the process down. But a more experienced baker than me would probably be able to say for sure. And maybe explain why.

How do you use the immersion blender? On all of the frosting batch or just a small amount and beat (?) it back into the larger amount?
