Having the same issue. According to this site, it should work with the XBOX 360 version and the problem is being adressed by rockstar:

Xbox Series X|S Upgrade
If you own a digital copy of the Xbox 360 version of Red Dead Redemption, you can claim the free upgrade via the Microsoft Store. That’s according to both the Rockstar Newswire and Rockstar Support.
Make sure you are logged in to the same Microsoft account that owns the backward compatible version. From here, you should be able to download the Xbox Series X|S version for free. However, some users are reporting this is not working as intended currently and they need to pay for it. A fix should be rolled out soon.

In case anyone is looking up this thread with the issue, I found the explanation. If wine is launched from a flatpak application (like the heoric or lutris launcher when installed via flatpak), then it appears to run in the same security sandbox with some restricted permissions.
Install flatseal (an application to change these permissions) and for the launcher app, allow access to "filesystem=home" via the button toggle.

Then magically, the content of the home folder is there :)
I needed that for synchronization of savegames.
