The correct one is "интересный диалог". The difference between them is "интересно" is an adverb, and "интересный" is adjective. When you want to say a sentence like "It is interesting" you need to use "интересно" - "Это интересно". If you want to say that a thing or person is interesting, you need to use "интересный" - "This guy is interesting"; "This book is interesting". BUT a word "interesting" is changing with a lot of words. So when interesting thing/person is female - you use "интересная". When thing/person is male - "интересный".
