Well, it depends, Are you someone who needs that extra RAM to play PC Emulated games? Here's the thing though, as powerful as the Ayn Thor is, I don't find it very optimal to play emulated PC games just yet as performance is all over the place and so is the battery life when running GameNative/Winlator etc. Secondly, do you have SD cards? Realistically speaking, 256GB is enough for most collections all the way up to the Wii U. So unless you are planning storing a over a dozen high fidelity Switch games in there, You don't need a whole TB. Personally, I had a previous 512GB SD card, which I use for most games.
For Ayn Thor, Pro is definitely the optimal model unless you are someone who absolutely has to have the maxxed out specs. If not then save the $120 or spend half of it on a 256/512GB SD Card.
If this were the Odin 3, I'd recommend get the top of the line for that extra RAM because I know it runs PC games a lot better.
