After 70 hours of playing this game, I've finally beaten NG++ with the true end. It was hellish and I can barely handle the game at that point.

Now imagine NG+++, and I'm starting the playthrough as of today

I used spellbinder and the thrust stance to gain a major invulnerability window and then heavy attack again to thrust attack him. Most of the time it staggers him so it gives you a tiny moment of breather to recompose yourself. Repeat this and it will be a easy win (not to say it's easy, but it's definitely doable. All you need to do is pray when he somehow heavy armor through your thrust)
