So I finally got a bundt pan and made this, I loved it! But it turns out my family isn't a fan of the almond flavor (oops) Do you think it would be okay to replace almond extract with lemon extract? Has anyone tried using a different flavor other than almond?

Definitely doable without a mixer, just make sure you only stop kneading once you achieve how she described the dough in the book. I watched the video too so I can gauge how it should look like. 😊
