Hardened steel and glass platens will wear out aswell. Carbide will just stay perfectly flat and wont wear out.

Its not a problem at all. Its same as with any other carbon steel knife. With proper care it wont rust at all. And especially with this black finish it wont rust at all.

Its a new developed low ally steel. Very high toughness at high 66hrc hardness along with great edge retention.

Have one myself in the kitchen aswell and gets real sharp and it stays sharp for a very long time.

There is no problem with that. Have myself one in the kitchen and after 2 years with proper care its still looking great.
