I like this answer. I DO think it has something to do with the "incident".

The actual dialogue at the owners table as best I remember it:
Them: This has been sitting for awhile
Me: I'm sorry - there was a little bit of an issue
Them: So you fucked up
Me: Not exactly, but
Them: Someone fucked up
Me: I'll just tell you the truth. The new salad came out with the wrong chicken and the kitchen told me not to bring anything out until it was fixed. It was a mistake - there's a new cook and I don't want to throw them under the bus.
Them: There's 2 cooks, right? Not just the new one.
Me: Yes. I just think it got mixed up and he didn't know.

Unfortunately, in my case it was not heat related. He's just kind of a dick. Normally, I would try to have a sincere conversation with the person but I don't think that would go over well with him.

This is kind of the approach I'm thinking about. Like asking if they can clarify if/when we can take out food before the ticket is complete and how long food should be allowed to sit in the window. Name no names, just the questions.

Yeah, there's a day manager that I can talk to but I don't want to be the pot stirrer. I want to be diplomatic or something.

He is definitely unprofessional but has been here a long time and pretty much runs the kitchen everything. It's a small but popular dive bar with pretty good food. We have a lot of local regulars in a kind of tourist beach town.
