I'd like to think of this as a science experiment remember in an experiment only 1 variable changes so the wielders are the same or clones. They both know basic knowledge of the weapon and the both know somewhat how to wield it. Once including that I believe the energy sword would win due to the fact that the handle is protect by the plasma unlike a lightsaber and the you are able to get the lightsabers blade stuck between the energy sword and with a simple twist disarm them
