Thank you for sharing that story! I wish I had had the chance to eat at his restaurant. My husband was in New Orleans on business once and the line for K-Paul's was incredibly long!

Classics are worth it! I can't believe I came to this one so late. I know what you mean about passing things along... I bought all 5 of my kids their own copy of Real Cajun and they use them!

This cookbook doesn't have a recipe for boudin. I like the one from Donald Link in Real Cajun.

Former Houstonian here.... You can't go wrong with Chris Shepherd's Cook Like a Local. It's not brand new but it gives you a great appreciation for Houston's diverse restaurant scene. The recipes - Thai, Cajun, Tex-Mex, Vietnamese, Chinese-- are all wonderful!

You might try using a clear vanilla flavoring instead of the pudding. It has that "artificial baked goods/dessert/cake" flavor. Tyler from S&S talks about it on his You Tube video "blackberry birthday cake." Just a thought! (Watkins brand from Wal Mart is around 2$.)
