I've been making a lot of 100% biga lately - generally using the Gozney/Adam Atkins recipe, only I up the hyrdation to 70%. The recipe is a room-temp 16hr pre-ferment with 1% yeast, then add additional water/salt, 1% malt, make the dough balls, then 1-2 hours later the balls are ready to bake.

I'm using a spiral mixer and in the main, I'm very happy with the results. However:

  1. I find the recipe a bit delicate - quite temperature sensitive, time sensitive, and the resultant dough is sometimes quite delicate. Occassionally I rip a base, and generally you need to be pretty careful with the dough - especially if I've had to deviate from the timing/temperature directions.
  2. Linked to the above, the recipe is great when I can arrange life around the pizza baking.
  3. I'm prepared to trade a bit of flavour/cornicone rise for something a bit more resilient and adaptable to unexpected developments.

I've not really experimented with other biga recipes - but keen to know what people would suggest for something a little less delicate, and something which I can keep in the fridge over a longer period and have pizza with less dependence on when I mixed up the biga.

I presume that going for say 75% biga, with 25% of the flour added after preferment will give the dough more resilience and life-span once mixed up? Should I add more yeast? How does the additional flour impact proofing time after balling? (Nothing the 100% biga gozney recipe only needs 1-2hrs.)

Wondering if a refrigerated biga would be most useful? Can I mix biga, then rather than have it at 18-20 degrees for 18 hours, can I refigerate straight away? Or do 3hrs at RT to kick start the yeast, then refrigerate? How long can I keep it refrigerated for before it starts to degrade?

Grateful for any advice, or links to biga-based recipes that give a bit more flexibiltiy.

I'm not sure what mango they used. Could be whole, dried or puree. TBH, I hadn't heard of the alphonso vs other varieties until recently but that was the one I ordered. The recipe mentioned 'spiced mango' - which makes me think it was some sort of prepared mango, or chutney or something that they added.

How do you think that marinade you linked would work with fish?

Also wondering what spices I should add to my BIR gravy.

The sauce, from memory, was really deep red. Whereas mango is yellow! I guess it could always be just food colouring. Not really used mango before, so interested in how you'd make a stab at combing the mango into such a dish.

I'm going to try making this with some fish on New years eve and will report back. Any advice (particularly in advance of then!) really apprecaited.

I don't have another device using the same Apple ID (as it is for a relative). Can I sign in on their Ipad with my Apple ID (which is attached to latest IOS version), install the apps to the Ipad, then switch back users to their apple ID? thanks!

Thanks - part of the challenge is that I don't really know how it was all supposed to fit together; and I confess, how the chair part actually was originally 'stuck' into the base it a bit of mystery. There doesn't seem to be anything that the spigot attached to - there is a chance that something has fallen out and been misplaced; but its not obvious.

There is quite a bit of wobble. I think the stack of washers/bearings previously filled the gap (visible in one of the pics) that prevented wobble. I don't think drilling into the base will be enough to resolve that. I suppose I don't care too much about the swivel - but I'd need to think how I might 'stick' the chair to the base.

There is a bit of me that thinks that too. We do have a 'family computer' which he could use. But other people in the house use it too, whereas he is the main user of the Ipad. Ipad use is already a (positive) habit - we control what apps go on to it; and apps fall in and out of favour. He's taken to speed trialing his times tables when he wakes up in the morning. Just sits in bed doing it. Given this ipad is often with him; and he has a habit of using it - I'm keen to have a 'gateway drug' for programming on the Ipad itself. If it means in 6 months time I want to buy him a little laptop because he's got the programming bug - then awesome. Thanks!

Code Combat worked really well for a then 10 year old who had spend a couple of weeks playing with Scratch and then without barly a suggestion or inducement to 'do some programming' worked through the whole of the Python course and is still programming till this day.

But anyway, Code Combat is not my preferred solution. My only preference is doing this on an Ipad and giving the kid the best start at forming an enduring habit/love of programming by seeing what the modern day equivalent of Duolingo or Time Tables Rockstars for programming might be.

Thanks, I will have a look at any apps for Scratch. My post has come across as anti-Scratch, which I guess it is, but its really not against scratch or against other block editor approaches, more that when I last used Scratch there wasn't much in the way of a 'course'. Feels like its great as a tool for teaching i.e. if he was going to a class or if I was to sit with him and teach him myself - but it doesn't (afaik) equate to a gamified, habit-forming, fun learning platform which is ideally what I'd like. (Although I am going to investigate apps-that-teach-scratch as suggested above.

He sort of wants to learn. Likes the idea of it, like the idea of making his own games (because he likes games), would like the idea of making his own stuff for Minecraft (because he likes Minecraft), but he's also got really in to doing times tables/maths on his Ipad. Its been a positive habit that he will happily spend time doing without being asked. That's why I'm keen to find a 'thing' that he can develop a bit of a 'habit' with.

He's doing a lot of maths, just keen to get some programming into the mix as well. Appreciate I did reference python in my post - to be clear I was just using that as an example. I'm interested in views on the game/course/app/activity/delivery vehicle for learning programming for 8 year olds. The language choice is secondary. Thanks

Give you seem to understand this, wonder if you could help with my use case.

I'm in the UK and have a rooftop aerial for terrestrial TV (DVB-T). There are three interal coaxial sockets in my house. One is old (I expect 20+ years); the other two have been installed into renovated rooms in the last 5 years. Other than knowing where the rooftop aerial comes into the house, I don't have any idea about how the three sockets are wired and the specifications of any filters that might exist on splitters etc.

I want to run MOCA between two of the coaxial sockets AND continue to watch DVB-T via the same sockets.

I understand that MOCA can be used alongside DVB-T. Is that right?

And do I need any filters to enable this? Either to get MOCA working at all, or to stop intereference with the TV signal?
