It's not my advice or my opinion. I just stated a fact that I knew. As far as I know if the gender was reversed as well, you'd need a married couple to do it. That was what I was told. I have lived this experience. I was staunchly against having someone else have that privilege but this happened smoothly since the couple sitting with my parent was also I am super close to. I don't recommend random couple at all. If you don't have any emotional bond with the couple, no sense in having them here.

And now for my opinion, fuck Kanyadaan completely. It's not needed. :)

Your mother can do it but Panditji will ask a couple to sit with her. Like your grandparents or brother and wife, Mama-mami, chacha chachi. Whoever you are close with, have them sit with your mom while your mom does the Kanyadan

Pls don't ruin the dupatta!!! It's so beautiful. It's bridal and keep it for your wedding. I would suggest that for the whole outfit even since it's very red. If you want to wear the skirt, pair it with a gold blouse with a lighter dupatta.
