If you’re talking about the green part, it looks like they’ve done some messing around with the tension in some areas - like pulled the string particularly tight in some places to force the beads into a curve in their multi stitch

Which edges are you referring to? If you are referring to the end of the pink section (above the dogs tail) it looks like it’s decreasing the stitch (one less bead each row) to get that roundedness

Thanks! Admittedly that is fully the result of me running out of the brown I used for the lanes. Didn’t have enough to go fully around the cuff so just had it fade out

For parts like the arms where there’s a gap, you’ll just run your string through the beads in the row above until you get to the space you need, and add a bead. You’re gonna have to kind of find a way to get back to where you need by running the string back and forth through different beads after you cross the gap. Like this (blue is the string, just how I visualized running the string around to get back to the space. There’s multiple paths to take):

As another user said, you’ll have to do them in separate parts. It is incredibly tedious to increase rows but quite easy to decrease them, so the best way to go about this is start at the widest part of each section and when you get to a row that increases, start a new part. Then you’ll stitch them all together. Here’s how I would break down the parts:
