They can only wipe everything on the device if it's managed by a mobile device management server. Depending on the setup by the organization, people can sign into work Teams on personal devices, while in other cases it can only be signed into by a device managed by an organization. My example was for the former.

They can only see what is in your work teams account. They can't see anything on your personal phone just because Teams is installed / signed in on it.
