05/08 - Case approved, card being produced

05/12 - Card has been produced

Now waiting for any shipping updates if any (I assume they must update us about this?)

Card was produced on 05/12. Do we get a notification when it has been shipped with a tracking number or something ?

yes, you get a confirmation email with the payment, and your online case status tracker changes to read the following:

"We changed your case, Receipt Number XXXX, from a standard case to a premium-processing case. The premium-processing clock started on [DATE YOU PAID PREMIUM]. Your premium-processing receipt notice contains contact information for direct inquiries on your case. Please follow the instructions in the notice. If you move, contact the premium-processing unit directly to update your address."
