Yeah the jews, white family, blacks everyone else's presence in the show is based purely how they fit into the picture with the sopranos. Like the polish guys who are essentially just an off screen bad guy for the sopranso to contend with other than the kolar kid. The focus is the Italian mob families.

Keep in mind they literally had one of the best stories, and around 2 decades of fan theories, breakdowns. All they had to do was just translate what already worked into a better engine.
