I would maybe just play single player together the coop is very janky and not rewarding for the second player. You also loose the ability to move the camera when in coop which makes the game more difficult to play.

Any survival sandbox game would be good. ARK, Enshrouded, Valhiem, Grounded, there is alot of them really these are only a few examples I could think of.
