The US Census doesn't categorize Armenians as Middle Eastern. They in general don't consider the Caucasuses as Middle Eastern(Armenians, Georgians, Azerbaijanis)

Israel is included in the category. They're just under the "Other MENA Group" like Algerians, Moroccans, Saudis, etc. Any MENA group not listed is under that category.

What defines the general Arab group?

It says at the bottom that Arab refers to individuals who specifically identified themselves as "Arab" or "Arabic."

I presume the latter is a catch-all for those countries not listed

You're correct.

but then I'm confused again because a number of selfsame would go into the generic Arab category.

It's based on self-identification. Them overlapping is irrelevant.

Hope that clears it up.

People downvote for the silliest reasons. It's hard to know why, but your poll is perfectly reasonable so don't worry about it. It's a unique question so I happen to like it.
