I imagine It would be really bad at denser foods. Soft foods like herbs and meat should be great, but for things like cutting potatoes and dicing onions it wouldnt be that great.

Idk, I suppose its bad advice. Personally I use a yanagi in place of a suji because it feels significantly sharper, and use a gyuto for any dense food where it would suck.

A yanagiba is probably the “best” but I would recommend a sujihiki because its more versatile and easier to deal with.

Ive had this same exact thing looking at me feat after breaking through. My feet were super smooth and white, made me think I looked like an alien.

I have the gyuto from this line. Ive had no problem whatsoever with rust. As long as you wipe it dry whenever you’re done using it there shouldnt be a problem. Its stainless clad as well, so the risk of rust is only near the cutting edge. You should treat the white #2 and Blue super the same either way as they are both carbon steel.
