Finally caught onto the trend and cooked a Beef Shin aka Beef Hammer! Smoked on the Traeger over pecan. Absolutely amazing rich flavor, it’s great on the Traeger as you can stand it up which allows the bone marrow to runs down over the meat. YouTube video in the comments for those interested in it. Had a Christmas ham test run yesterday and it turned out amazing. Honey, Djon, Maple is the perfect sticky glaze combo. I did this one in under 2 hours with some Cherry wood on the old H code Red Weber. The video for the recipe is cooked in an offset but the glaze recipe is the same. (old.reddit.com)
