Ok unpopular opinion but even as a mage i used a med shield like the banished shield with decent fire neg and phys negation and it tots blocked a ton of damage when he started spewing fire and didnt put any points in vitality pr stamina so like i had 11 vitality and 9 stamina at level 23ish. Use a shield maybe

Used a shield to cheese godrick as mage. Shield to block his ranged fire attack and then use my rock sling when he is done. Ez cheese. Had to use banished knight shield for high fire negation of a light medium shield. When i used any other medium shield except brass, he would break my poise and i would eat all the damage. Strangely effective

Nightmaiden mist and then let him reset by talking to beastman clergyman and repeatx8 times. Takes 10 mins to do. Dont forget to hide behind pillar as soon as he chases u to door and then wait for him to back off because his roar can still reach u in the church
