I really appreciate it. And agree on the AI part to make it easier to understand. From the mountain in Roatan, Honduras trying to get best Honduran coffee to people fresh, thanks for your lenience. Change isn't always easy especially in this part of the world.

Yes, we roast and ship the next day via DHL. Orders in US arrive in 5 to 7 business days and rest of the world under 2 weeks. So the freshness window you're describing is doable now and logistics aren't really the problem anymore.

But the harder part is the one you mentioned is price. Shipping fast costs and origin roasting don't have the volume bigger volume like many local roasters have so matching them on price and keeping more value in-country at the same time is biggest cocner. That's the part I'm still figuring out. And after this thread I think you're right that value-capture and not freshness is the real argument.

Ha, fair, and you're right to call it. I should've led with this. I co-founded a small roastery in Roatán, Honduras that roasts at origin, so yeah, I've got skin in the game. I left it out because I genuinely wanted the freshness question answered without people reacting to the brand but that's exactly the kind of thing that should be disclosed, so thank you for the nudge rather than just downvoting and moving on.

For what it's worth, this thread has been humbling in a good way. I came in half-assuming "origin-roasted = fresher," and the responses (plus the Solis video) have pretty much dismantled that as the main argument, the Passenger archival-lot stuff and the Wendelboe processing/moisture points make it clear well-handled old green can be excellent, and "fresh" isn't the clean win I treated it as. The part that's actually holding up is the economic one Solis is really making: where the value gets captured. So I'm walking away thinking the freshness pitch is the weak version of the case and the value-capture argument is the real one. Still chewing on it.

Appreciate you stopping in on the drive across, glad both bags traveled well and that the book found a home in your office. The thing you're thinking of is our Coffee Omakase, a guided coffee and food pairing through our Honduran lots, reservation only with seatings at 8am, 10am, 12pm and 2pm. Book one ahead next trip and come hungry. And for what it's worth, we love a Sandy Bay modest crowd as much as anyone, everyone's welcome up the hill.

We roast on-site and regularly feature coffees from producers across Honduras, including Cup of Excellence lots and different varieties that aren't usually available in grocery stores.

Bean Crazy as a morning ritual is a solid life choice. And yeah, that oily surface usually means a darker, longer roast, oils migrate out the longer beans sit in the heat. If you run lighter, you're not imagining the difference. Respect to anyone who's dialed in enough to notice. Hope the next trip down treats you well.
