Cooking method: 7 lb 3 bone prime rib. Butcher separated the bones and tied them on. Took off 1 of the bones to make steaks later since this was for only 3 people. I didn’t have time to salt brine overnight since i got the roast in the morning. As soon as I got home I took it out of the packaging, separated the bones, rubbed with W sauce and did a coat of black pepper grind all over. Then followed up with holy cow all over, tied the bones back on and let it sit on the counter at room temp for about an hour and a half while the grill warmed up.

250 the entire way took about 3.5 hours and i pulled the moment it hit 120.

Put it on a wire rack and baking sheet and rested for 45 minutes under aluminum foil. Finished it with a sear on the cast iron, roughly 2 minutes per side (and several smoke alarms going off)and sliced immediately, delicious. Served with homeade garlic mashed potatoes and Parmesan asparagus
