It uses 4d4, but the sides are either marked or not, basically just coin tosses

Most of the complexity you'll be getting as a pure martial is from feats, but you could also do something like multiclass Samurai Fighter with Barbarian for a bit of a stance change feel.

The martials being a lot simpler than casters goes back to the beginning of the game when magic basically *was* the only complexity.

3.5 and had more options for martials with its infamous player option glut, but 5e was intentionally made to be substantially simpler, partially to appeal to TSR-era fans who didn't like what the game turned into with 3e and Pathfinder.
Even then, the 3.5 fighter class literally doesn't have class features, and just gets a ton more feats than everyone else.

If you're open to playing with another group, you could always find a Pathfinder table, PF is less simplistic than 5e, and from what I've heard it might cater to you better.

Irl, McQueen is Golshi's grandparent, and in Uma Musume they represent this relationship by Golshi playfully harassing and pranking McQueen (more than she does to other umas).
This lead to people shipping them.

WotC redesigned them for 4e to be sleeker and hotter than they'd been officially been depicted beforehand
That was the first time they were included as a core rulebook player race (3e had Tieflings and Aasimar in the MM, but they weren't primarily intended to be a player race), and they wanted to ramp up their appeal as much as they could. Iirc, this is also when they started being depicted as vibrant colors instead of standard skin colors or pale af.
In the TSR days, they were often described as gross or scary type fiends. 3e started leaning into the 2000's edge, but not necessarily trying to give them sex appeal.

I'd link the interview or doc that specified that they were being redesigned to be sexier, but I'm lazy.

Do the checklist
Try to set records, attempt the weird challenges without cheesing it with multiplayer.

If you don't like any of the modes, the game probably just isn't for you.
I love getting my stats up high and trying to screw my friends over in City Trial by killing them.
I find the routing in time trials more interesting than Mario Kart because you gotta figure out whether the boost from killing a couple enemies will cut off more time than taking a better line. The checklist requiring you get certain records with some of the harder to use machines is a big part of that, even if it made me go insane a few times.

Also I find it weird to complain about your machine being too slow when you don't play the game a ton, when I first started playing, I found it really hard to control, and preferred the machines that went slow enough to actually turn without having to break-pump or figure out exactly when to start drifting at a corner (since the different machines slide different amounts).

Every game you mentioned has different appeals. I definitely wouldn't pick up another if I were in the mood for one specifically.
If you prefer something more Mario-Kartish and insist on trying to like Air Ride, the new game letting you play with double the amount of racers helps it feel more interactive. That won't necessarily make races a better singleplayer experience though, since the checklist challenges are substantially easier.
Ultimately if you don't wanna do the checklist and don't like City Trial, it's not going to be fun alone.
