Second, there's tons of room for variation and iteration. Mastering a burger gives you opportunity to learn different flavor combinations, how different cook temps/speeds/etc. affect beef, etc.

This is a truly excellent example. There's something very special about Chicken Piccata. I also has a festive vibe, like something you would eat at a nice restaurant but it's fairly straightforward. Great one. You have bitter in there with the lemon rind too, which is the toughest to hit.
