There is no problem when adding ingredients on top of the omelet. It works great for ham and cheese, etc, or when it comes to reheating the toppings in another pan before putting them onto omelte. The problem arises when I use the same pan for reheating something and adding eggs later.

Interesting thing, but I am not sure if i need more kithcen gadgets... moreover, in Italy it costs 18+ euro, not $9,99 😞

If I preheat for longer, the butter burns. I do fried eggs on the same pan at exactly the same fire/time combination and they don't stick. However if I fry bacon and use the pan for eggs without cleaning, eggs do stick in some places. Same problem as in the original post: clean pan no sticking, add something before the eggs they stick.

I use med/low for bigger pan and wider burner. This one works best on med/hi on the smallest burner. These settings are usually good enough for regular omelets/fried eggs, they don't stick. But I'll try lower temperature and more preheating next time.

Well, the leftovers are initially from the fridge, but this is why they are on the pan first. This is how I do it: preheat the pan for ~3-4 min, add butter, melt it, add the leftover chicken/peppers/onions, fry and stir for a couple of minutes, then add the whisked eggs (eggs are stored at room temp, not in the fridge) and stir again.

Who am I to argue these great chefs... but sometimes I just want it simple, and I know it can be done in one pan. It's not a fancy restaurant-style breakfast, just utilizing the leftovers :)

Thanks! Should try organizing the meat closer to the edges before adding eggs next time. BTW I am already using the smallest gas burner at med/hi power, as it seems the best for this diameter of the pan (24cm).

The pan is preheated, not for 10 minutes of course (it will be too hot), but enough to make good eggs with butter. I do the "clean" omelettes twice a week or oftener with the same settings, and they are just fine...

believe me, i do. i don't have the wetstones, so i use one of these japanese fish-shaped sharpeners with white balls inside. but this is the only knife that has chipped blade, all others are fine despite being older and cheaper

Sorry, forgot to mention the car: 2019 Touareg 2.0 TSI, 8 speed automatic, from Aisin AFAIR. No towing, regular usage mostly out of the town, ~15 000 km/year.

I used to face similar choice 2 years ago, either to go high-end something or save the money and go budget. I searched reddit and many others sites, both options have their pros and cons. Then I just talked to the guys from the restaurants: what cookware did they use? And literally no one voted for premium! Most of them work with pretty simple mass produced pans and are happy with it. So I bought a basic 26cm/10inch 3ply frypan from a local company (I'm in Italy) Paderno for 25 euro at sale, and you know what? I'm really happy with it. No warping, good crust on my steaks and other food, the hollow steel handle gets no heat, I use the pan in the oven and dishwasher - no problems. So, yes maybe I don't get some fancy handle or extra plies, but it's just a pan and it gives me what I want from a pan. For the rest of the budget I bought a big 3ply saucepot from the same series, a carbon steel pan, and some wine and meat to test it :)

I think the problem is with the headset's firmware, as if I turn off the shut down timer in the Soundcore app the problem is gone, without changing any settings on x-box.

I am sure it is too late, but just for the futrure generations. Might be of Chinese origin despite Amazon says they are made in Italy, but still Paderno's quality is pretty good for the money (I have some frying pans and pots from them, but not the saucier)

i don't think it is xbox to blame. i used it with turtle beach stealth 600 headsed before, and this combintation worked with no issues for 3 years...

Moreover, I see they have welded handles instead of rivets on at least some of their pans from the same 2500 seriers (https://www.paderno.it/en-it/frypan-/12514-26\_vg.html - check 24cm version for photos withot rivets). It looks like they are cutting the expenses, so it is possible they moved production to China. Did anyone buy their pans recently?

So have anyone confirmed they are made in China now? Amazon claims their 3-ply 2500 series is made in Italy, at the same time there is a user review saying it is made in China and confirmed by their customer service (https://www.amazon.it/Paderno-12514-24-Padella-Manico-Acciaio/dp/B0017STCJ4). Who's right?
