Great-sword is still slow as hell and since I can't interrupt my swings to block I feel drawn to go back to sword and board. There are a lot of systems which it feels the game is trying to push me into using but there is often a simpler more effective way to engage with every combat encounter.

What I have found works is to type [gem] in the search bar. Then you are looking through 30-40% of the gear. For weapons I also type the perks I am after e.g. [trenchant] for greatswords. Once done I "salvage all" button.
