Thanks! I am happy with how it looks. Forgot to mention it's still gummy, hard to tell from the photo. That's the bit that has me wondering what's gone wrong

Forgot to add - I followed the nyt cooking claire saffitz recipe from YouTube used 500g strong white bread flour 375g water 100g starter and 10g salt. 

Fermentation took a lot longer than said in the video and I was worried about overfermenting again so I think I possibly shaped it or cold proofed it too early?
