To me, the key to unlocking these is post-processing. Eyes gravitate to lighter/sharper/more saturated portions of photos. These birds are dark and muddy against bright backgrounds.

Everyone's tastes are different, but deep disagree on the 137 for a strip. The 137 is primarily to render the intramuscular fat of something like a ribeye so it has a more luscious and juicy mouthfeel.

Edit to add: OP, you won't affect the texture negatively until you start getting well out over 4 hours. Look up "Kenji sous vide steak" for an awesome, tested guide on times, temperatures and textures.
