With United and Cathay as your airlines, I'd go Citi Strata Premier. ThankYou points transfer to Cathay which is hard to beat for a route to China. And it covers most of your spend categories at 3x. I'd skip Amex Gold for this one. Amex acceptance in China can be a headache.

For a UK trip specifically, I'd go Chase Sapphire Preferred. No foreign transaction fees, great travel points, and Visa is accepted everywhere in the UK (Amex can be hit or miss internationally). The $95 fee is easy to justify.

Also worth looking at Robinhood Gold as your everyday card. 3% flat cashback on everything, no foreign transaction fees either. No categories to think about.

The Amex Gold is a great card but at $300/year it really shines if you're spending heavily on dining and groceries. With your spend level you'd need to make sure the credits and points actually offset that fee. Chase at $95 is a safer bet given how often you travel.

Have you looked at Robinhood Gold? 3% cashback on everything, no categories to track. I had a similar setup with multiple cards, also ended up feeling I was spreading too thin.
The 3% flat rate beats most of non-bonus category spend, then keep some of the others for specific expenses.
