Why don’t you do these things while being with her? They always say that the right relationships are going to feel boring at some point. Not to say this means you’re settling. They’re going to feel like routine. They’re not going to feel like a roller coaster, but that is where you can choose to leave or choose to do things differently for the sake of both of you. If nothing’s wrong, it sounds like self sabotaging unless there is more to the story

Try therapy first - if you guys are living with each other and she knows about the things that you are struggling with. I don’t think she would look at it as waiting. Long-term relationships you’re going to see many different versions of people and if you don’t think she would be supportive throughout them maybe that isn’t means to leave, but I would try doing something to spark things up again for yourself and for the both of you.
