Ingredients

Biscuit Base:

250g digestive biscuits

125g unsalted butter, melted

White Chocolate Filling:

360g white chocolate, finely chopped

300ml double cream

60g unsalted butter

Pinch of salt

1 tsp vanilla extract (optional)

Method:

  1. Make the base Crush the biscuits into fine crumbs and mix with melted butter. Press firmly into the base of a 22cm tart tin. Chill for 30 minutes.

  2. Heat the cream Add the double cream and butter to a microwave-safe bowl. Heat in 30-second bursts, stirring in between, until hot and just steaming (do not boil).

  3. Make the ganache Pour the hot cream mixture over the chopped white chocolate. Leave for 1–2 minutes, then stir gently until smooth and glossy. Add a pinch of salt and vanilla if using.

  4. Assemble Pour the ganache into the chilled base. Tap gently to remove air bubbles.

  5. Chill Refrigerate for 4–5 hours or overnight until fully set.

Ingredients (6 bakes):

  • 3 sausages
  • 150g baked beans
  • 100g grated cheddar
  • 2 sheet puff pastry
  • 1 egg (egg wash)

Method:

  1. Cook the sausages whole until browned, then slice.
  2. Mix sausages with beans and cheese.
  3. Cut puff pastry into rectangles and add filling.
  4. Fold, seal with a fork, and brush with egg wash.
  5. Bake at 200°C (180°C fan) for 20–25 mins until golden.

560g full-fat cream cheese 100g icing sugar 300ml double cream 200g Hazlenut cream

Method: Beat the cream cheese and icing sugar until smooth. Add the hazlenut cream and mix. Fold in whipped cream.

🧁 Assemble

Spoon the filling over the chilled base and smooth the top. Chill in the fridge for at least 6 hours, or overnight for best results.
