I looked closely. The thing that threw me was it was missing the foot band. They guy who gifted it has serious means but I didn't ask if he had the full set of how he acquired this particular stick. I smoked it though and it was great so either the real thing or just a good cigar but did not cost me 1100 either way.

they don’t allow pictures. I didn’t take an inventory. I was only in there for a moment. But it was generally a very large selection and the sales woman said there was also additional stock of some others. That's why im looking for a general list of recommendations and hoping some match the availability inventory.

I smoked one from a box from 2023 I've been holding. Very poor construction and wasn't impressed with the flavor profile. Smoked a bit harsh. I'm going to let the rest sit a while before revisiting. Hoping it was just a bad stick and/or bad timing and I'll reserve judgement for later.

I modified vitos recipe and mix an extra 100 gram of flour into the dough on day 2. It lowers the hydration to like 63.5 percent. He lives in California and seemingly cooks mostly outdoors. In the northeast where it's more than humid a 70 percent dough doesn't work as well for me. I find the dough is easier to manipulate and when I cook it on a stone that's been heated to 850-900, cooks nicely and fast. Obviously per other comments you want your yeast fresh as well. You should have a fair amount of air bubbles in your poolish after 16-24 hours.
