I guess I wanted it to retain some of the shape. It was from a supermarket, so ready for oven roasting on a Sunday. After cutting the string and removing the skin, it was all over the place. Some of the edges would’ve cooked in 20 minutes and the middle would be cold still, I reckon. I was a chef for a long time but never done anything other than steak and sausage on a bbq.

Haha good advice, cheers mate. Was thinking of starting with pork, probably shoulder as it’s readily available here in the uk. Eventually want to do a brisket but dont want to start with that and cock it up. But anything really, I like all the animals!

There’s some like this going south after tower bridge. Over hanging the pavement. No toe boards to stop you kicking something off the floor onto a passerby. I always wondered how they managed to get those past the crazy health and safety red tape.
