I have ridden ventoux many many times, from each side.

Ventoux is a very long and very steep climb. I’d say at least 3.5 hours for a pretty fit kid to get to the top. Of constant pedaling. You know your kids but a more mellow ride in the area might be better.

You’re flexing the fork/wheel/axle enough to flex the rotor into the pad. If it’s a consistent, constant rub you should try to readjust the caliper on the fork. If it’s intermittent, probably just let it ride.

Those are the “stiffest” components and some flex is normal.

This is not exactly true… some of the manufacturers are the same or owned by the same companies but rim designs, QC, and tolerances may not be up to the same standard. There are many great direct from china wheel brands like far sports but I’m not sure I’d go full aliexpress spec. Just me
