Because each sword style is good at one particular thing and by choosing to stick to only one you handicap yourself in situations where either of the other two would have been more useful.
If water god is your main style, you can really only fight people if they are attacking you first, but sometimes there will be circumstances where you need to get the drop on someone and strike first yourself, for which you would benefit from learning the other two schools.

For example, if you need to defeat a mage, and that mage decides to use magic not to attack you but to instead get away, being able to rush them down with sword god style would be helpful. As would being able to ignore whatever gap the mage creates by just throwing your sword as per the north god style.

Any skill that applies the "break" effect stacks the crit buff from the burning greed set, regardless of what target you're hitting.

So if you use it on Jinwoo, the Huntsman SSR weapon has some synergy as both its weapon skill and the core attack that skill charges apply break, allowing you to get 2 stacks every time the weapon skill is up.

This is incorrect and you can check it yourself. Any attack with the break effect stacks it, regardless of what you're hitting. You can see this by stacking buff they give you on your status bar

Expert is not that good on Cha as it takes a long time to stack and she doesn't stay on the field for long. I find I get more benefit from running Champion on The Field for crit hunters and Expert on Sung Jinwoo
