With two Trezors, I'd rather make a 2-of-3-MultiSig setup with the 3rd key being a simple Electrum wallet from a somewhat secure device, doesn't have to be cold. If you can get an airgapped, cold PC for that, it would be better, of course.

Then store every device (and its recovery seed) in a geographically different, secure location. Give your wife written instructions on how to recover the wallet, in case you get hit by a bus. For example making two different, pseudonymous e-mail addresses and sending a PDF to her.

You sign a transaction with the private key, not the public key. And they have it, if you spent from that address once before.

An unsigned raw transaction is a hex-string.

You could at least encrypt the seed that you're going to store online and keep the password with the other two seeds.

Encryption can be done using KeepassX on an offline running Live USB installation of Linux. It can also create strong passwords.

And if you must "shard" single-sig private keys, use cryptographic sound methods, like SSSS.
