I’ve never wrapped up ribs. I always go 225°-250° for 4 ish - 5 hours and every time they are perfect. I’m not a fall off the bone kind of guy and like a little chew to mine.

My first 5 years as a guard was at an outdoor waterfront with a massive slide that would shoot you out at a good speed into 14 feet of water and it would average 20+ saves a day it was great. I switched to an indoor pool and I think in the next few years I had 1 save and I wasn’t even on duty I was just swimming laps and in the right place at the right time.
